The Aji amarillo (literally yellow chili pepper) is a Capsicum baccatum grown all over Peru considered as their "holy trinity" when it comes to Peruvian cuisine, along with garlic and red onion.

This pepper turns to a bright yellow/orange as it mature. It's medium hot to hot and has a nice fruity flavor that adds a unique taste to dishes. The skin is pleasantly crunchy.

One plant should give you plenty of pods for your cooking, especially from the second year onwards.
